Ingredients

softened

1/2 cup (100g) granulated sugar

1 teaspoon vanilla extract

1/4 cup (60ml) heavy cream

1 cup (150g) fresh strawberries

finely chopped

1 1/2 cups (180g) graham cracker crumbs

1/4 cup (50g) unsalted butter

melted

1/4 cup (35g) chopped toasted pecans (optional)

Additional chopped strawberries for garnish (optional)


Instructions

  • In a bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  • Add the heavy cream and chopped strawberries, mixing until combined.
  • In another bowl, mix the graham cracker crumbs with melted butter until the crumbs are moistened.
  • Shape the graham cracker mixture into taco shapes on a baking sheet and bake at 350°F (175°C) for about 10 minutes until golden.
  • Allow the shells to cool, then fill each with the cheesecake mixture.
  • Top with additional chopped strawberries and toasted pecans, if desired. Serve and enjoy!
