Ingredients
2 cups (250 g) all-purpose flour
1/2 cup (100 g) granulated sugar
1/4 tsp fine salt
3/4 cup (170 g) unsalted butter
melted
16 oz (450 g) cream cheese
softened (2 blocks)
3/4 cup (150 g) granulated sugar
2 large eggs
room temperature
1 tsp pure vanilla extract
2 cups (300 g) fresh strawberries
chopped
2 tbsp (25 g) granulated sugar
1 tbsp lemon juice
1 tsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, mix together the flour, 1/2 cup of granulated sugar, fine salt, and melted butter until combined.
- Press the mixture firmly into the bottom of the prepared baking dish to create the crust.
- In another bowl, beat the softened cream cheese with 3/4 cup of granulated sugar until smooth.
- Add in the eggs, one at a time, and vanilla extract, beating until fully incorporated.
- In a separate bowl, toss the chopped strawberries with 2 tablespoons of granulated sugar, lemon juice, and cornstarch.
- Spread the cream cheese mixture over the crust, followed by the strawberry mixture on top.
- Bake in the preheated oven for about 30 minutes, or until the center is set.
- Allow to cool completely before slicing into bars.
Notes
For best results, chill the bars in the refrigerator before serving to enhance the flavors.
