1.5 pounds sirloin steak or ribeye, cut into 1-inch cubes

1 pound baby red or Yukon gold potatoes, halved or quartered

1 medium onion, diced

3 cloves garlic, minced

1 cup beef broth or stock

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and black pepper, to taste

2 tablespoons olive oil or butter

Cheese Sauce:

2 cups shredded cheddar cheese

1 cup heavy cream

2 tablespoons cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Pinch of cayenne pepper (optional)

Optional Garnishes:

Fresh parsley, chopped

Chives, sliced


Instructions

Step 1: Prepare the Steak and Vegetables
Pat steak cubes dry. Season with salt, pepper, smoked paprika, and thyme. Dice the onion, mince garlic, and wash and halve or quarter the potatoes.

Step 2: Sear the Steak (Optional)
Heat olive oil or butter in a skillet over medium-high heat. Sear steak 2–3 minutes per side until browned. Transfer to the slow cooker.

Step 3: Layer Ingredients in Slow Cooker
Add onions, garlic, and potatoes over the steak. Pour in beef broth and Worcestershire sauce.

Step 4: Cook Slowly
Cover and cook on low 6–7 hours or high 3–4 hours, until steak is tender and potatoes are cooked. Avoid lifting the lid frequently.

Step 5: Prepare the Cheese Sauce
In a medium saucepan, combine heavy cream, cream cheese, garlic powder, and onion powder over low heat. Stir until smooth. Gradually add shredded cheddar until fully melted.

Step 6: Combine and Serve
Pour cheese sauce over slow-cooked steak and potatoes. Stir gently. Garnish with parsley or chives and serve hot.

Notes

Use cubed steak for even cooking.

Skip searing if short on time; the slow cooker still produces tender meat.

Stir in a splash of milk or broth if cheese sauce thickens too much.
