These St. Patrick’s Day Party Food Snacks are a delightful combination of flavors that everyone will enjoy, featuring cheesy, savory mini potato bites wrapped in flaky puff pastry.
Ingredients
Mini potatoes
Shredded cheddar cheese
Puff pastry sheets
Corned beef slices
Swiss cheese
Pickles
Spinach dip or ranch dip
Green bell peppers
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the mini potatoes until tender, then let them cool and cut in half.
- Scoop out a small portion of potato from the center of each half and mix it with shredded cheddar cheese.
- Wrap each potato half with a slice of corned beef, then place a Swiss cheese slice on top.
- Roll out the puff pastry sheets and cut them into squares large enough to wrap the potato halves completely.
- Place the potato halves in the center of each pastry square, add pickles and a spoonful of spinach dip or ranch dip, and fold the pastry over to seal.
- Place the wrapped potatoes on a baking sheet and bake for 20-25 minutes or until golden brown.
- Serve warm and enjoy with sliced green bell peppers on the side.
