2 cups graham cracker crumbs

1/2 cup (1 stick) unsalted butter melted

1/4 cup granulated sugar

16 oz (450g) cream cheese softened

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

2 tbsp fresh lemon juice

1 tsp lemon zest

1/3 cup fresh lemon juice

1 tbsp lemon zest

1/4 cup granulated sugar

3 large egg yolks

2 tbsp unsalted butter

1 1/2 cups fresh strawberries diced

1/4 cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the prepared baking dish to form the crust.
  • In another bowl, beat the cream cheese and 1/2 cup granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract, fresh lemon juice, and lemon zest.
  • Pour the cheesecake mixture over the crust and spread evenly. Bake for about 30 minutes or until set. Remove from the oven and let cool.
  • For the lemon curd, in a saucepan, whisk together fresh lemon juice, lemon zest, and sugar. Gradually add the egg yolks, stirring constantly over medium heat until thickened. Remove from heat and stir in butter until smooth.
  • Pour the lemon curd over the cooled cheesecake layer and spread evenly. Chill in the refrigerator for at least 2 hours.
  • For the strawberry topping, mix diced strawberries, granulated sugar, lemon juice, and cornstarch slurry in a bowl. Let it sit for 10 minutes until the strawberries release juices.
  • Once chilled, spread the strawberry topping over the lemon curd layer. Cut into bars and serve with whipped cream if desired.

Notes

Make sure to chill the cheesecake bars for a couple of hours to ensure they set properly before serving.
