1 cup fresh mint leaves

Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent.
- Add the peas and stock to the pot, bringing the mixture to a boil. Reduce heat and simmer for about 15 minutes, or until peas are tender.
- Stir in the mint leaves and cook for an additional 2 minutes. Remove from heat and blend until smooth using an immersion blender or a regular blender.
- Season with salt and pepper to taste. Ladle the soup into bowls and swirl in crème fraîche for a marbled effect.
- Garnish with microgreens if desired, and serve warm.
