Warm up with this Spicy Miso Carrot Soup, a cozy vegan bowl that perfectly balances spice, creaminess, and nourishment.
Ingredients
4 cups Carrots chopped
1 tablespoon Olive Oil or coconut oil for flavor
1 medium Onion diced
3 cloves Garlic minced
1 tablespoon Ginger fresh
grated
4 cups Vegetable Broth low-sodium recommended
3 tablespoons Miso Paste red or white
2 tablespoons Soy Sauce or tamari for gluten-free
1 tablespoon Sriracha or adjust to taste
1 can Coconut Milk full-fat recommended
to taste Salt
to taste Pepper
1/4 cup Chopped Green Onions
1/4 cup Chopped Cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chopped carrots and vegetable broth to the pot, bringing to a boil. Reduce heat and simmer for about 20 minutes, or until the carrots are tender.
- Once carrots are tender, remove the pot from heat and stir in miso paste, soy sauce, and sriracha, mixing until fully combined.
- Blend the soup until smooth using an immersion blender or by transferring to a blender in batches.
- Return the blended soup to the pot, stir in the coconut milk, and season with salt and pepper as desired. Warm through.
- Ladle the soup into bowls and garnish with chopped green onions and cilantro before serving.
Notes
Feel free to adjust the spice level by adding more or less sriracha and miso according to your taste. This soup stores well and can be reheated for quick lunches.
