½ cup milk

2 tablespoons chopped fresh cilantro

1 tablespoon lime juice

½ cup mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon hot sauce (optional

for extra heat)

Fresh cilantro leaves

Lime wedges

Crumbled cotija cheese (optional)


Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the roasted corn kernels, diced jalapeños, shredded cheese, flour, cornmeal, baking powder, chili powder, smoked paprika, cumin, and salt.
  • In a separate bowl, whisk together the egg, milk, cilantro, and lime juice. Combine the wet ingredients with the dry ingredients and mix until well incorporated.
  • Scoop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.
  • While the bites are baking, prepare the spicy aioli by mixing together the mayonnaise, lime juice, chili powder, and hot sauce in a small bowl.
  • Once baked, let the corn bites cool slightly before serving with the spicy aioli, garnished with fresh cilantro, lime wedges, and crumbled cotija cheese if desired.

Notes

Feel free to adjust the level of spiciness by using more or fewer jalapeños. These bites can also be frozen before baking for later use.
