Ingredients
For the Stir-Fry:
1 lb (450 g) lean ground beef (85/15 preferred)
2 tablespoons vegetable oil (or sesame oil for extra flavor)
1 medium onion, finely chopped
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 medium red bell pepper, sliced
1 cup broccoli florets
1 medium carrot, thinly sliced
1 zucchini, halved and sliced
2 green onions, chopped (for garnish)
For the Sauce:
3 tablespoons soy sauce (low sodium if preferred)
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
2 teaspoons chili garlic sauce (adjust to spice level)
1 teaspoon sesame oil
1 tablespoon rice vinegar
1 tablespoon brown sugar
¼ cup (60 ml) beef broth or water
For the Rice:
2 cups cooked jasmine or basmati rice (freshly steamed or leftover)
½ teaspoon salt
1 teaspoon sesame oil (optional for aroma)
Optional Garnishes:
Toasted sesame seeds
Sliced fresh red chili or crushed chili flakes
Extra green onions or cilantro
Instructions
Step 1: Prepare the Rice
Rinse 1 cup of jasmine or basmati rice under cold water until clear. Add to a pot with 2 cups water and a pinch of salt. Bring to a boil, reduce heat to low, cover, and cook for 15 minutes until tender. Fluff with a fork, drizzle sesame oil, and keep warm.
Step 2: Make the Stir-Fry Sauce
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, chili garlic sauce, sesame oil, rice vinegar, brown sugar, and beef broth. Stir until smooth; set aside.
Step 3: Cook the Ground Beef
Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add ground beef and cook 5–6 minutes, breaking it apart as it browns. Drain excess fat if needed. Add chopped onion and cook 2 minutes more until softened.
Step 4: Add Garlic and Ginger
Push beef to one side of the pan. Add remaining oil to the empty side, then sauté minced garlic and grated ginger for 30 seconds until fragrant. Mix into beef.
Step 5: Add the Vegetables
Add bell pepper, carrot, broccoli, and zucchini. Stir-fry 3–4 minutes, keeping them crisp-tender. For softer vegetables, add a splash of water and cover for 1–2 minutes.
Step 6: Combine with Sauce
Pour the prepared sauce over the beef and vegetables. Stir to coat evenly. Let simmer 2–3 minutes until thickened and glossy. Adjust seasoning to taste.
Step 7: Assemble the Bowl
Spoon hot rice into bowls. Top with the spicy beef and vegetable mix. Garnish with green onions, sesame seeds, or chili flakes. Serve immediately and enjoy!
Notes
Spice Level: Adjust chili garlic sauce to taste—start with 1 teaspoon if sensitive to spice.
Texture Tip: Don’t overcook the vegetables; they should remain slightly crisp for the best contrast.
Rice Substitute: Brown rice, quinoa, or noodles work great too.
Meal Prep: Divide into containers for ready-to-go lunches.
