1 lime

juiced

3/4 cup lite shredded Mexican cheese

3 tbsp fresh cilantro

Instructions

  • Heat the avocado oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula.
  • Stir in the chopped onion, red bell pepper, and jalapeño. Cook until the vegetables are tender.
  • Add the sweet potatoes and half of the taco seasoning. Stir and let cook for about 5 minutes.
  • Pour in the fire-roasted diced tomatoes, green chilis (if using), beef stock, and the remaining taco seasoning. Stir to combine.
  • Cover the skillet and let it cook for about 15-20 minutes or until the sweet potatoes are fork-tender.
  • Squeeze lime juice over the skillet and sprinkle with shredded cheese and cilantro. Let the cheese melt for a couple of minutes.
  • Serve hot topped with sliced tomatoes, avocado, salsa, greek yogurt, queso, tortilla chips, or Jalapeno Crema as desired.
