6 cups fresh or frozen blueberries (about 900 g)

¾ cup granulated sugar (150 g)

2 tablespoons cornstarch

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon pure vanilla extract

½ teaspoon ground cinnamon (optional)

Pinch of salt

For the Cobbler Topping:

1 cup all-purpose flour (125 g)

1 cup granulated sugar (200 g)

1 teaspoon baking powder

¼ teaspoon salt

1 cup whole milk (240 ml)

½ cup unsalted butter (115 g), melted

Optional: ¼ teaspoon ground nutmeg

For Garnish (optional):

Vanilla ice cream or whipped cream


Instructions

Step 1: Preheat and Prepare
Preheat the oven to 350°F (175°C). Butter or grease a 9×13-inch baking dish and set it aside.

Step 2: Make the Blueberry Filling
In a large bowl, mix the blueberries, sugar, cornstarch, lemon juice, lemon zest, vanilla, cinnamon, and salt. Toss gently until the berries are well coated. Spread the mixture evenly in the prepared baking dish.

Step 3: Mix the Batter
In another bowl, whisk the flour, sugar, baking powder, and salt. Gradually whisk in the milk until smooth. Stir in melted butter and optional nutmeg.

Step 4: Assemble the Cobbler
Pour the batter evenly over the blueberry filling. Do not stir. The batter will rise through the fruit while baking, forming a golden crust.

Step 5: Bake
Bake for 40–45 minutes, until the top turns golden brown and the filling bubbles at the edges. For a crispier crust, bake an additional 5 minutes.

 

Step 6: Cool and Serve
Allow the cobbler to cool for 10–15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

You can use frozen blueberries without thawing; just increase the baking time by 5–7 minutes.

For extra texture, sprinkle a little cinnamon sugar on top before baking.

To prevent sogginess, let the cobbler rest before covering or refrigerating.
