1 cup long-grain rice

rinsed

2 cups low-sodium chicken broth

2 tsp Cajun spice blend


Instructions

  • In a large pot, heat a tablespoon of oil over medium heat and add the sliced Andouille sausage. Cook until browned, about 5 minutes.
  • Add the diced chicken thighs and cook until no longer pink, about 5 minutes more.
  • Stir in the chopped bell peppers, onion, and minced garlic. Sauté until the vegetables are softened, about 4 minutes.
  • Add the diced tomatoes with their juice, rice, chicken broth, and Cajun spice blend. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.
  • After 20 minutes, add the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
  • Fluff the jambalaya with a fork, serve hot, and enjoy!
