Ingredients
1 lb Andouille sausage
sliced
1 lb boneless chicken thighs
diced
1 cup fresh or frozen shrimp
peeled and deveined
1 cup bell peppers (mixed red and green)
chopped
1 medium yellow onion
chopped
4 cloves garlic
minced
1 can (14.5 oz) diced tomatoes in juice
1 cup long-grain rice
rinsed
2 cups low-sodium chicken broth
2 tsp Cajun spice blend
Instructions
- In a large pot, heat a tablespoon of oil over medium heat and add the sliced Andouille sausage. Cook until browned, about 5 minutes.
- Add the diced chicken thighs and cook until no longer pink, about 5 minutes more.
- Stir in the chopped bell peppers, onion, and minced garlic. Sauté until the vegetables are softened, about 4 minutes.
- Add the diced tomatoes with their juice, rice, chicken broth, and Cajun spice blend. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.
- After 20 minutes, add the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
- Fluff the jambalaya with a fork, serve hot, and enjoy!
