These Soft & Chewy Ginger Molasses Cookies are the perfect blend of spices and sweetness, offering a delightful treat for any occasion.
Ingredients
2 and 3/4 cups all-purpose flour
spooned and leveled
2 teaspoons ground ginger
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cups unsalted butter
softened to room temperature
1 cup packed brown sugar
1 large egg
2 teaspoons vanilla extract
1/3 cup molasses
1/3 cup white sugar or coarse sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, ground ginger, cinnamon, ground cloves, ground nutmeg, baking soda, and salt.
- In another bowl, beat the softened butter and brown sugar until creamy. Add the egg, vanilla extract, and molasses, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized amounts of dough, roll them into balls, and then roll them in the white sugar or coarse sugar.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, do not overbake the cookies. They will continue to set as they cool.
