Ingredients

spooned and leveled

2 teaspoons ground ginger

1 teaspoon cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cups unsalted butter

softened to room temperature

1 cup packed brown sugar

1 large egg

2 teaspoons vanilla extract

1/3 cup molasses

1/3 cup white sugar or coarse sugar


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, ground ginger, cinnamon, ground cloves, ground nutmeg, baking soda, and salt.
  • In another bowl, beat the softened butter and brown sugar until creamy. Add the egg, vanilla extract, and molasses, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Scoop tablespoon-sized amounts of dough, roll them into balls, and then roll them in the white sugar or coarse sugar.
  • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra chewiness, do not overbake the cookies. They will continue to set as they cool.
