Delightful Soft Buttercream Bunny Cookies perfect for spring celebrations and Easter gatherings.
Ingredients
1 cup butter (I prefer Kerrygold unsalted butter for this)
1/2 cup shortening
1.25 cups sugar
1 egg (room temperature
about 70°F)
1.5 tsp vanilla
2 tsp almond essence
4.25 cups flour (I always use King Arthur all-purpose flour)
3/4 cup corn starch
2 tsp baking powder
1/2 tsp lemon zest
1 cup butter (softened but not melted to hold its shape)
6 cups powdered sugar (sifted to remove lumps)
2 tsp vanilla essence
8 tbsp milk
sugar sprinkles
black sugar pearls
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the butter, shortening, and sugar until light and fluffy.
- Add the egg, vanilla, and almond essence, mixing until combined.
- In a separate bowl, whisk together the flour, corn starch, baking powder, and lemon zest.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll the dough into balls and place them on the prepared baking sheets, flattening slightly.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on the pan for a few minutes before transferring to a wire rack.
- To make the frosting, beat the softened butter until creamy. Gradually add the sifted powdered sugar, mixing well.
- Add the vanilla essence and milk, mixing until desired consistency is reached.
- Frost cooled cookies and decorate with sugar sprinkles and black sugar pearls.
Notes
Make sure the butter is softened but not melted for the frosting to hold its shape. You can adjust the thickness of the frosting by adding more milk or powdered sugar.
