120 grams almond flour

4 tablespoons butter

3/4 cups marshmallow fluff

1/2 teaspoon vanilla extract

2 teaspoons cornstarch

pinch of salt

1 cup powdered sugar

1 tablespoon milk or cream

1 tablespoon chocolate powder

natural or Dutch

2 sheets graham crackers

1 tablespoon tiny dehydrated marshmallow bits


Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the almond flour, powdered sugar, and cocoa powder, then whisk together to remove any lumps.
  • In a separate bowl, beat the egg whites until foamy, then add cream of tartar and continue whisking until soft peaks form.
  • Gradually add the powdered sugar to the egg whites while continuing to whisk until you achieve stiff peaks.
  • Gently fold the dry mixture into the egg whites, being careful not to deflate the mixture, until well combined.
  • Transfer the macaron batter to a piping bag and pipe small circles onto the prepared baking sheet.
  • Let the piped macarons rest for 30 minutes to form a skin, then bake for 15-18 minutes until they have risen and formed feet.
  • For the filling, beat together the butter, powdered sugar, marshmallow fluff, vanilla extract, cornstarch, and a pinch of salt until smooth and creamy.
  • Once the macarons are cooled, spread or pipe the filling onto one macaron shell and sandwich with another shell.
  • For the drizzle, mix powdered sugar, milk or cream, and chocolate powder until smooth, then drizzle over assembled macarons.
  • Top with crumbled graham crackers and tiny dehydrated marshmallow bits for decoration.
