Description
These S’mores Chocolate Chip Muffins are a delightful twist on the classic campfire treat, combining rich chocolate, gooey marshmallows, and crunchy graham crackers into a fluffy muffin.
Ingredients
All-purpose flour
Graham cracker crumbs
Granulated sugar
Light brown sugar
Baking powder
Baking soda
Salt
Large eggs
Whole milk
Plain Greek yogurt
Unsalted butter
Vanilla extract
Semi-sweet chocolate chips
Mini marshmallows
Crushed graham crackers (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine all-purpose flour, graham cracker crumbs, granulated sugar, light brown sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, whole milk, plain Greek yogurt, melted unsalted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over mix.
- Fold in the semi-sweet chocolate chips and mini marshmallows.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle extra mini marshmallows and crushed graham crackers on top.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool slightly in the pan before transferring to a wire rack to cool completely.
Notes
For an extra gooey experience, add more mini marshmallows on top right after baking and allow them to melt slightly. Store in an airtight container to keep them fresh.
