Description
A creamy, hearty garlic parmesan chicken stew made easy in the slow cooker. Tender chicken, potatoes, carrots, and a rich cheesy garlic sauce create the perfect one-pot comfort food for weeknights or meal prep.
Ingredients
1 kg (2.2 lbs) boneless, skinless chicken thighs or breasts, cut into chunks
500 g (1 lb) potatoes, diced into 1-inch cubes
3 medium carrots, peeled and sliced
2 celery stalks, chopped
1 medium onion, finely diced
6 garlic cloves, minced
950 ml (4 cups) chicken broth
240 ml (1 cup) heavy cream
120 g (1 cup) Parmesan cheese, freshly grated
115 g (4 oz) cream cheese, softened
2 tbsp all-purpose flour
2 tbsp butter
1 tsp Italian seasoning
½ tsp dried thyme
1 bay leaf
1 tsp salt (adjust to taste)
½ tsp black pepper
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Prepare base: Place potatoes, carrots, celery, and onion in the bottom of the slow cooker.
Add chicken and seasonings: Layer chicken on top, then add garlic, Italian seasoning, thyme, salt, pepper, and bay leaf.
Add broth: Pour in chicken broth, stir gently to combine.
Slow cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and vegetables are soft.
Make cream mixture: 30 minutes before serving, melt butter in a saucepan. Whisk in flour, cook 1 minute. Gradually whisk in heavy cream. Stir in cream cheese until smooth, then add Parmesan until melted.
Finish stew: Stir creamy mixture into slow cooker. Cook uncovered for 30 minutes until thickened.
Serve: Remove bay leaf, ladle into bowls, garnish with parsley. Serve hot with bread or rice.
Notes
Freshly grated Parmesan melts smoother than pre-grated.
Chicken thighs stay juicier than breasts during long cooking.
Cut vegetables evenly for consistent cooking.
Adjust seasoning before serving, as flavors mellow in the slow cooker.
