Ingredients
2 lbs beef stew meat cut into bite-sized pieces
1½ lbs baby potatoes halved
4 tablespoons unsalted butter melted
6 cloves garlic minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon smoked paprika
½ teaspoon onion powder
1 teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon crushed red pepper flakes optional
for heat
1 cup beef broth
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch mixed with 2 tablespoons water
for thickening
2 tablespoons fresh parsley chopped
for garnish
Instructions
- In a slow cooker, combine the beef stew meat, halved baby potatoes, melted butter, minced garlic, salt, black pepper, smoked paprika, onion powder, oregano, thyme, and crushed red pepper flakes if using. Stir well to combine.
- Pour in the beef broth and Worcestershire sauce, mixing gently to ensure everything is coated. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
- In the last 30 minutes of cooking, mix the cornstarch with water and stir it into the slow cooker to thicken the sauce. Allow it to cook until thickened.
- Once cooked, garnish with chopped fresh parsley before serving.
Notes
For extra flavor, consider adding a splash of red wine to the beef broth. Adjust the crushed red pepper based on your heat preference.
