Instructions
- In a large skillet, heat a tablespoon of extra virgin olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
- Transfer the browned sausage to the slow cooker, along with diced butternut squash, canned white cannellini beans, shredded chicken breast, and quinoa or farro.
- Pour in the chicken or vegetable broth, stirring everything together. Add the balsamic vinegar and a pinch of salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the squash is tender.
- During the last 30 minutes of cooking, stir in the fresh spinach.
- Serve hot, topped with a dollop of Greek yogurt for added creaminess.
Notes
