8 oz pasta

2 chicken breasts sliced lengthwise

1/2 tsp garlic powder

salt and pepper to taste

1 tbsp olive oil

1 tbsp butter

1 tbsp all-purpose flour

1/2 cup chicken broth

3/4 cup heavy cream

1/4 cup pesto

1/2 tsp lemon juice

1/4 cup sun-dried tomatoes

2 cups fresh baby spinach

freshly grated Parmesan cheese (optional)

Instructions

Cook the pasta according to package instructions; drain and set aside.
In a skillet, heat olive oil and butter over medium heat, then add sliced chicken, garlic powder, salt, and pepper.
Sauté the chicken until cooked through, approximately 6-8 minutes. Remove and set aside.
In the same skillet, whisk in flour and cook for 1 minute, then slowly add the chicken broth while stirring.
Once thickened, lower heat and stir in heavy cream, pesto, lemon juice, and sun-dried tomatoes.
Add cooked pasta and spinach to the sauce, tossing to combine.
Finally, return the chicken to the skillet, mix well, and serve warm, topped with Parmesan cheese if desired.
