Instructions
- Start by preparing the shrimp. In a pan, heat olive oil over medium heat, then add peeled and deveined shrimp. Season with garlic powder, onion powder, paprika, chili powder, dried oregano, and salt. Sauté until the shrimp are pink and cooked through, about 5-7 minutes.
- While the shrimp are cooking, prepare the avocado mixture. In a bowl, mash ripe avocados and mix in lime juice. Adjust seasoning if necessary.
- Cut the large cucumbers in half lengthwise and scoop out some of the seeds to create boats.
- Fill each cucumber boat with a layer of sushi rice, followed by the avocado mixture.
- Top the avocado layer with sautéed shrimp. Drizzle with a mixture of Kewpie mayonnaise and sriracha, adding honey if you like a touch of sweetness. Sprinkle sesame seeds on top before serving.
