Ingredients

1.5 lb raw shrimp peeled and deveined

1 teaspoon chili powder

¼ teaspoon salt to taste

2 tablespoons olive oil

2 tablespoons salted butter

½ cup chopped onion

5 cloves garlic minced

1.5 cups cooked corn kernels

1 teaspoon smoked paprika

1 cup half-and-half

4 oz feta cheese divided

2 small limes

fresh cilantro


Instructions

  • Heat olive oil in a large skillet over medium heat. Add the shrimp, chili powder, and salt, cooking until the shrimp turn pink, about 3-5 minutes. Remove the shrimp and set aside.
  • In the same skillet, melt the butter and sauté the onions and garlic until softened, about 3-4 minutes.
  • Add the corn, smoked paprika, and half-and-half, stirring to combine. Bring to a simmer.
  • Stir in half of the crumbled feta, then return the shrimp to the skillet. Cook for an additional 2-3 minutes until heated through.
  • Serve with lime juice squeezed on top and garnish with cilantro and remaining feta.
