This easy Shrimp and Creamed Corn recipe combines succulent shrimp with rich, creamy corn for a delightful dish that’s ready in just 30 minutes and made in one pan.

1.5 lb raw shrimp peeled and deveined

1 teaspoon chili powder
¼ teaspoon salt to taste
2 tablespoons olive oil
2 tablespoons salted butter
½ cup chopped onion
5 cloves garlic minced
1.5 cups cooked corn kernels
1 teaspoon smoked paprika
1 cup half-and-half
4 oz feta cheese divided
2 small limes
fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium heat. Add the shrimp, chili powder, and salt, cooking until the shrimp turn pink, about 3-5 minutes. Remove the shrimp and set aside.
- In the same skillet, melt the butter and sauté the onions and garlic until softened, about 3-4 minutes.
- Add the corn, smoked paprika, and half-and-half, stirring to combine. Bring to a simmer.
- Stir in half of the crumbled feta, then return the shrimp to the skillet. Cook for an additional 2-3 minutes until heated through.
- Serve with lime juice squeezed on top and garnish with cilantro and remaining feta.
Notes
Feel free to adjust seasoning to your taste. This dish pairs well with crusty bread or over rice.
