Sheet Pan Chicken Pitas with Herby Ranch are a simple, vibrant, and healthy meal. Perfect for weeknight dinners, these pitas are loaded with seasoned chicken and colorful vegetables, drizzled with a homemade herby ranch dressing for an extra burst of flavor.
Ingredients
1.5 lbs boneless
skinless chicken breasts
cut into strips
2 cups bell peppers (red
yellow
and green)
sliced
1 cup red onion
sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
4 whole wheat or regular pitas
1/2 cup plain Greek yogurt or sour cream
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon dried dill
1 teaspoon dried parsley
1/2 teaspoon garlic powder
Salt and pepper to taste
Optional: 1-2 tablespoons buttermilk or milk to thin the dressing
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken strips, bell peppers, and red onion with olive oil, garlic powder, onion powder, paprika, dried oregano, salt, and pepper until well coated.
- Spread the chicken and vegetables in an even layer on a baking sheet.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- While the chicken is baking, prepare the herby ranch dressing by whisking together Greek yogurt (or sour cream), mayonnaise, lemon juice, dill, parsley, garlic powder, salt, and pepper. If desired, thin with buttermilk or milk.
- Once the chicken and veggies are done, remove them from the oven and let them cool slightly.
- Serve the chicken and vegetables in whole wheat pitas, drizzled with herby ranch dressing.
Notes
Feel free to substitute other vegetables based on your preference or what you have on hand. This meal is also great for meal prep and can be made ahead of time.
