Ingredients

2 lbs chicken thighs or drumsticks (68 pieces, bone-in, skin-on)

2 lbs (900 g) baby potatoes, halved or quartered

4 tbsp olive oil

4 large garlic cloves, minced

2 tsp paprika

2 tsp dried oregano

1 tsp dried thyme

1 ½ tsp salt

1 tsp black pepper, freshly ground

2 tbsp lemon juice, freshly squeezed

2 tbsp fresh parsley, chopped (for garnish)

Optional additions:

1 red onion, cut into wedges

1 bell pepper, sliced

Pinch of red pepper flakes


Instructions

Step 1: Prepare the oven and sheet pan
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly coat with non-stick spray.

Step 2: Season the potatoes
Toss potatoes with 2 tbsp olive oil, 1 tsp salt, ½ tsp pepper, 1 tsp paprika, and ½ tsp oregano. Spread evenly on the sheet pan.

Step 3: Season the chicken
Rub chicken with remaining olive oil, garlic, 1 tsp paprika, 1 ½ tsp oregano, 1 tsp thyme, ½ tsp salt, ½ tsp pepper, and lemon juice.

Step 4: Arrange on the pan
Place chicken skin-side up among potatoes. Scatter optional vegetables if using.

Step 5: Roast
Bake 40–45 minutes, flipping potatoes halfway. Chicken is done at 165°F (74°C) internal temperature.

Step 6: Garnish and serve
Sprinkle parsley before serving. Rest 5 minutes to keep juices in.

Notes

Pat chicken dry for extra crispy skin.

Do not overcrowd the pan; use two trays if needed.
