Description

Ingredients

1 pound shaved beef

2 tablespoons tapioca starch or arrowroot powder

2 tablespoons avocado oil plus more as needed

2 cups broccoli florets fresh or frozen

2 scallions chopped

sesame seeds for garnish

1/2 cup coconut aminos

3 tablespoons coconut sugar

1 teaspoon avocado oil

3 cloves garlic minced

1 tablespoon minced ginger


Instructions

  • In a bowl, toss the shaved beef with tapioca starch until well coated.
  • In a large pan, heat 2 tablespoons of avocado oil over medium-high heat.
  • Add the beef to the pan and cook for 3-4 minutes until browned, then remove and set aside.
  • In the same pan, add the broccoli and stir-fry for 3-5 minutes until tender.
  • Add scallions, garlic, and ginger, and cook for 1-2 minutes until fragrant.
  • Return the beef to the pan, pour in the stir fry sauce made from coconut aminos, coconut sugar, and additional oil, then toss everything together until well coated and heated through.
  • Serve hot, garnished with sesame seeds.

Notes

For a lower-sugar option, reduce the amount of coconut sugar or substitute with a sugar alternative.
