Celebrate St. Patrick’s Day with these festive Shamrock St. Patrick’s Day Cookies! Soft and buttery, with a hint of almond and decorated with colorful sprinkles, they are a treat for the eyes and the taste buds.
Ingredients
¾ c. salted butter – room temperature
⅓ c. brown sugar – packed
⅓ c. granulated sugar
1 large egg
2 tsp. vanilla extract
½ tsp. almond extract
2 c. all-purpose flour
¼ tsp. kosher sea salt
¼ tsp. green gel food coloring
1 egg white
1 tbsp. water
¼ c. rainbow nonpareil sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the room temperature butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg, vanilla extract, and almond extract, mixing until well combined.
- In a separate bowl, whisk together the flour and kosher sea salt.
- Gradually add the flour mixture to the butter mixture, mixing until dough forms. Stir in the green gel food coloring until well incorporated.
- Scoop tablespoons of dough and roll into balls, then flatten slightly before placing on the prepared baking sheet.
- In a small bowl, whisk together the egg white and water, then brush the mixture over each cookie and sprinkle with rainbow nonpareil sprinkles.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool before serving.
Notes
For extra flavor, you can increase the almond extract to 1 tsp. Adjust the baking time slightly for larger or smaller cookies.
