Ingredients
1 tablespoon butter
1 tablespoon olive oil
4 cloves garlic minced
1 cup white wine
1 cup heavy cream
¼ cup Parmesan cheese shredded
2 tablespoons capers drained
1 teaspoon lemon juice freshly squeezed
salt to taste
8 oz spaghetti
1 pound scallops medium size about 12–14 scallops thawed completely if frozen
¼ teaspoon salt
2 tablespoons olive oil
Instructions
- In a large pot, cook the spaghetti according to package instructions until al dente.
- In a saucepan, heat butter and olive oil over medium heat, then add minced garlic and sauté until fragrant.
- Pour in the white wine and allow it to simmer for 5 minutes, reducing slightly.
- Stir in the heavy cream, Parmesan cheese, capers, lemon juice, and salt. Cook for an additional 5 minutes until the sauce thickens.
- While the sauce simmers, heat olive oil in another pan over medium-high heat. Season the scallops with salt.
- Seared the scallops for about 2-3 minutes on each side until they are golden brown and cooked through.
- Drain the spaghetti and add it to the sauce, tossing to coat.
- Serve the spaghetti topped with seared scallops and enjoy!
Notes
For best results, make sure your scallops are dried well before searing to achieve a nice crust.
