Ingredients
Cooked macaroni pasta: About 2 cups (around 200g)
cheese blend: 1 cup shredded sharp cheddar
1 cup shredded mozzarella
tortillas: Four large flour tortillas
butter or oil: 2 tablespoons unsalted butter or neutral oil
milk: 2 tablespoons whole milk
seasonings: ½ teaspoon smoked paprika
¼ teaspoon garlic powder
pinch of salt and black pepper
optional add-ins: Chopped scallions or cooked bacon bits
Instructions
- In a mixing bowl, combine the cooked macaroni pasta with the shredded cheddar, mozzarella, milk, smoked paprika, garlic powder, salt, and pepper. Mix until well combined.
- Heat a large skillet over medium heat and add 1 tablespoon of butter or oil.
- Place one tortilla in the skillet and spread half of the mac and cheese mixture on one half of the tortilla.
- Fold the tortilla over to cover the filling and cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve hot, optionally garnished with chopped scallions or crispy bacon bits.
Notes
For a spicier kick, consider adding jalapeños or hot sauce to the cheese mixture. Leftover quesadillas can be reheated in a skillet for crispy results.
