Description
This hearty sausage and red pepper hotpot is a comforting dish that’s perfect for gatherings. Full of flavor from spicy pork sausages, smoked bacon, and fresh vegetables, it’s a must-try for any day of the week.
Ingredients
1 tbsp sunflower oil
8 spicy pork sausages
4 rashers smoked bacon
finely chopped
1 onion
sliced
1 red pepper
seeds removed and cut into large chunks
1 large carrot
peeled and diced
1 garlic clove
crushed
300ml/½ pint chicken stock
400g tin chopped tomatoes
2 tbsp sun-dried tomato purée
2 fresh thyme sprigs
250g/9oz baby new potatoes
skin on
sliced into thick discs
salt and freshly ground black pepper
freshly cooked green vegetables
to serve
Instructions
- In a large pot, heat the sunflower oil over medium heat. Add the sausages and bacon, cooking until browned on all sides.
- Add the sliced onion, red pepper, carrot, and crushed garlic to the pot, sautéing for about 5 minutes until softened.
- Pour in the chicken stock, chopped tomatoes, and sun-dried tomato purée. Stir in the thyme and season with salt and pepper.
- Add the baby new potatoes, bringing the mixture to a simmer. Cover and cook for 30 minutes until the potatoes and sausages are cooked through.
- Serve hot with freshly cooked green vegetables on the side.
Notes
For an extra kick, consider adding some red chili flakes or swapping in Italian sausages. This dish can easily be made a day ahead and reheated.
