Delightful Santa Claus Macarons filled with a buttery sugar cookie buttercream and topped with cheerful royal icing decorations, perfect for holiday celebrations!


Ingredients

100 grams Domino® Golden Sugar

4 grams egg white powder

100 grams egg whites

105 grams almond flour

105 grams Domino® Powdered Sugar

1 1/2 cups Domino® Powdered Sugar

1 tbsp meringue powder

4 tbsp water

2 drops black gel food coloring

1 drop yellow gel food coloring

1/2 cup all-purpose flour

1/2 cup unsalted butter

1/4 cup Domino® Golden Sugar

1 1/4 cup Domino® Powdered Sugar

1 tsp vanilla extract

1/8 tsp almond extract

1/2 tbsp milk or heavy cream

1/4 cup desiccated coconut


Instructions

  • Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
  • In a mixing bowl, combine almond flour and powdered sugar. Sift together and set aside.
  • In a separate bowl, whip the egg whites until foamy, then gradually add the golden sugar while continuing to whisk until stiff peaks form.
  • Gently fold the dry mixture into the egg whites until fully incorporated, creating a smooth and shiny batter.
  • Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
  • Tap the baking sheets firmly on the counter to release air bubbles and let the macarons sit for 30 minutes to form a skin.
  • Bake the macarons for 15-18 minutes until they are set but not browned. Allow them to cool completely.
  • For the royal icing, whisk together powdered sugar, meringue powder, and water until smooth. Add gel food coloring as desired.
  • Fill half of the macaron shells with sugar cookie buttercream and sandwich with another shell. Decorate with royal icing as desired.

Notes

For added flavor and texture, consider using almond extract in the macaron shells. Be sure to let the macarons sit after baking to develop their classic crust.
