1 large English cucumber
4 ounces smoked salmon (sliced thin)
1/2 cup cream cheese (whipped)
1 tablespoon red onion (minced)
2 tablespoons capers
1 tablespoon fresh dill
zest of 1 lemon
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
- Slice the English cucumber lengthwise into thin strips using a mandoline or a sharp knife.
- In a bowl, combine the cream cheese, minced red onion, capers, fresh dill, lemon zest, salt, and pepper until well mixed.
- Spread a thin layer of the cream cheese mixture onto each cucumber strip.
- Place a slice of smoked salmon on top of the cream cheese and gently roll up the cucumber strip.
- Repeat the process for all cucumber strips and salmon slices.
- Chill the rolls for about 10 minutes before serving to allow flavors to meld.
Notes
These rolls can be made a few hours in advance and kept refrigerated until serving. Adjust the seasoning to taste.
