1 teaspoon granulated or brown sugar

1/4 cup warm water

2 cups all-purpose flour

4 tablespoons granulated sugar

2 tablespoons melted butter

3 cups sweetened shredded coconut

1/4 cup water

2 tablespoons melted butter

1 teaspoon vanilla extract

1 teaspoon almond extract

2 tablespoons brown sugar

1 1/2 teaspoons ground cinnamon

1/2 teaspoon freshly grated nutmeg

liquid red food coloring

1 tablespoon unsalted butter


Instructions

  • In a small bowl, combine the active dry yeast, granulated sugar, and warm water. Let sit for about 5 minutes until frothy.
  • In a large mixing bowl, combine the flour, 4 tablespoons granulated sugar, and salt. Make a well in the center and add the yeast mixture, warm milk, and melted butter. Mix until the dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes or until smooth. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  • To prepare the filling, mix shredded coconut, water, melted butter, vanilla extract, almond extract, brown sugar, ground cinnamon, freshly grated nutmeg, and a few drops of red food coloring in a bowl until combined.
  • After the dough has risen, punch it down and roll it out into a rectangle on a floured surface. Spread the filling evenly over the dough.
  • Roll the dough tightly into a log and place it seam-side down on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
  • Preheat your oven to 350°F (175°C). Brush the roll with melted butter before baking.
  • Bake for 25-30 minutes or until golden brown. Allow to cool slightly before slicing.
