Description

Ruthie’s Scandinavian Christmas Cookies are buttery, almond-flavored, and dusted with snowy powdered sugar. Delicate and festive, these cookies melt in your mouth and bring the cozy charm of Scandinavian baking to your holiday table.

For the Cookies:

2 ¼ cups (270 g) all-purpose flour

1 cup (227 g) unsalted butter, softened

½ cup (100 g) granulated sugar

½ cup (60 g) finely ground almonds or almond flour

1 large egg yolk

1 teaspoon vanilla extract

½ teaspoon almond extract

¼ teaspoon salt

For the Topping:

½ cup (60 g) powdered sugar, sifted (for dusting)

1 teaspoon ground cinnamon (optional, mixed with powdered sugar)


Instructions

  1. Prepare Dough: Cream butter and sugar until fluffy. Add egg yolk, vanilla, and almond extract.

  2. Mix Dry Ingredients: In a separate bowl, combine flour, ground almonds, and salt. Gradually add to the wet mixture until a soft dough forms.

  3. Chill Dough: Shape into a disc, wrap in plastic, and chill for 1 hour.

  4. Shape Cookies: Preheat oven to 350°F (175°C). Roll dough into logs and form crescents, or roll into balls. Place on parchment-lined baking sheets.

  5. Bake: Bake for 12–14 minutes until edges turn lightly golden. Keep tops pale. Cool on baking sheet for 2 minutes, then transfer to wire rack.

  6. Dust with Sugar: While still warm, roll or sprinkle cookies with powdered sugar (with or without cinnamon). Let cool completely before serving.

Notes

Butter should be softened, not melted, for the perfect texture.

Chill the dough to prevent cookies from spreading.
