2 cups buttermilk (shaken well before measuring)

1 tablespoon unsalted butter (melted and cooled to room temperature)


Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine 4 cups + 2 tablespoons of flour, baking soda, baking powder, and salt; mix well.
  • Stir in the currants until evenly distributed.
  • Make a well in the center, then pour in the buttermilk and melted butter.
  • Mix until a sticky dough forms.
  • Turn the dough out onto a floured surface and gently knead for a minute.
  • Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
  • Cut a cross on the top of the loaf with a sharp knife to allow it to expand while baking.
  • Bake in the preheated oven for 30-35 minutes or until the internal temperature reaches 180°F (82°C).
