4 cups + 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 teaspoons salt
1 1/4 cups currants
2 cups buttermilk (shaken well before measuring)
1 tablespoon unsalted butter (melted and cooled to room temperature)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine 4 cups + 2 tablespoons of flour, baking soda, baking powder, and salt; mix well.
- Stir in the currants until evenly distributed.
- Make a well in the center, then pour in the buttermilk and melted butter.
- Mix until a sticky dough forms.
- Turn the dough out onto a floured surface and gently knead for a minute.
- Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
- Cut a cross on the top of the loaf with a sharp knife to allow it to expand while baking.
- Bake in the preheated oven for 30-35 minutes or until the internal temperature reaches 180°F (82°C).
- Allow to cool on a wire rack before slicing.
Notes
For best results, use fresh currants and ensure your buttermilk is well shaken. This bread can be enjoyed warm or toasted.
