A simple yet flavorful dish made with juicy chicken breasts, fresh rosemary, garlic, and a touch of lemon. Perfect for weeknights or dinner parties.
Ingredients
4 boneless, skinless chicken breasts (about 1 ½ pounds total)
3 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
4 garlic cloves, minced
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
3 tablespoons olive oil
½ cup low-sodium chicken broth
2 tablespoons unsalted butter
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon onion powder (optional)
Instructions
Prep the Chicken: Pat chicken dry. Pound thicker parts if needed. Season with salt, pepper, and paprika.
Sear the Chicken: Heat 2 tablespoons olive oil in a skillet over medium-high. Cook chicken 4–5 minutes per side until golden brown. Remove and set aside.
Build the Base: Reduce heat. Add remaining oil and garlic. Cook 30 seconds. Stir in rosemary and lemon zest.
Deglaze: Pour in chicken broth. Scrape up browned bits. Simmer 2 minutes.
Finish Sauce: Stir in butter and lemon juice. Return chicken to skillet. Spoon sauce over top. Cover and simmer 6–8 minutes until chicken reaches 165°F (74°C).
Rest & Serve: Rest chicken 3 minutes before slicing. Spoon rosemary-lemon sauce over the top.
Notes
Use fresh rosemary for the strongest flavor.
Add mushrooms or zucchini when deglazing for a one-pan meal.
Substitute half the broth with dry white wine for extra depth.
