Shamrock Chips are a fun and festive snack made from crispy baked corn tortillas seasoned with fresh spinach and spices. Perfect for St. Patrick’s Day or any gathering!

8–10 small corn tortillas
1 cup fresh spinach
packed
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
Grated Parmesan or cheddar for sprinkling (optional)
Lime wedges for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender or food processor, combine fresh spinach, olive oil, salt, black pepper, and garlic powder (if using) until smooth.
- Brush both sides of each corn tortilla with the spinach mixture.
- Stack the tortillas and cut them into triangles to create chip shapes.
- Arrange the tortilla chips in a single layer on a baking sheet and bake for 12-15 minutes or until crispy.
- Remove from the oven and sprinkle with grated Parmesan or cheddar if desired.
- Serve warm with lime wedges on the side.
Notes
These chips are best served fresh but can be stored in an airtight container for a few days. Adjust seasonings to taste for a personalized flavor.
