Ingredients
For the Banana Bread:
3 ripe bananas, mashed
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour

1/4 cup sugar
1/4 cup Rebel float soda, or vanilla soda for an extra creamy flavor

Instructions
Step 1: Preparing the Banana Bread
Preheat your oven to 350°F (175°C) and grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
In a large bowl, mash the 3 ripe bananas using a fork or potato masher until smooth.
In a separate bowl, cream together the 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy (about 3-4 minutes).
Add the 2 eggs, one at a time, mixing well after each addition. Stir in 2 teaspoons vanilla extract.
In another bowl, combine 2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt, and 1/2 teaspoon ground cinnamon (if using).
Gradually add the dry ingredients to the wet ingredients, alternating with the 1/2 cup sour cream (or yogurt), mixing gently after each addition until just combined.
Fold in the mashed bananas until well distributed throughout the batter.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 2: Baking the Banana Bread
Bake the banana bread for 60-65 minutes, or until a toothpick inserted into the center comes out clean. Check after 50 minutes and cover loosely with foil if the top is browning too quickly.
Once baked, remove from the oven and allow the bread to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Whisk in 1/4 cup marshmallow fluff, 1 teaspoon vanilla extract, and 1/4 cup sugar, stirring until the marshmallow fluff dissolves and the sugar is fully incorporated.
Add the 1/4 cup Rebel float soda (or vanilla soda) and whisk until smooth. Let the frosting cool for a few minutes before spreading it over the cooled banana bread.
Step 4: Frosting the Banana Bread
Once the banana bread has completely cooled, spread the frosting generously over the top using a spatula.
For an extra touch, sprinkle mini chocolate chips or chopped nuts over the frosting if desired.

Bananas: The riper your bananas, the better. Overripe bananas will add natural sweetness and moisture to the bread.
