Ingredients
4 skinless
boneless chicken breast halves
cayenne pepper to taste
salt and ground black pepper to taste
all-purpose flour for dredging
2 tablespoons olive oil
1 tablespoon capers
drained
½ cup white wine
¼ cup fresh lemon juice
¼ cup water
3 tablespoons cold unsalted butter
cut in ¼-inch slices
2 tablespoons chopped fresh Italian parsley
Instructions
- Season the chicken breasts with cayenne pepper, salt, and black pepper. Dredge them in flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, add capers, white wine, lemon juice, and water, scraping up any browned bits from the bottom. Bring to a simmer.
- Return the chicken to the skillet and cook for an additional 2 minutes to heat through.
- Remove the chicken again and whisk in the cold butter until melted and combined. Return the chicken to the skillet one last time to coat with the sauce.
- Garnish with chopped parsley before serving.
Notes
For best results, use freshly squeezed lemon juice and serve with pasta or a side salad.
