Queijadas are delightful Portuguese custard cupcakes that pack a creamy, lemony flavor into each bite, perfect for dessert lovers.
Ingredients

1 stick (8 tbsp.) butter
cut into chunks
3 1/2 cups whole milk
1 1/2 cups flour
1/4 tsp. baking powder
4 eggs
3 1/4 cups sugar
1 tsp. vanilla extract
Zest of 2 lemons
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with cupcake liners.
- In a saucepan over medium heat, melt the butter and then add the whole milk, stirring until warm but not boiling.
- In a large bowl, whisk together flour, baking powder, eggs, sugar, vanilla extract, and lemon zest until smooth.
- Slowly add the warm milk mixture to the egg mixture, whisking continuously to avoid cooking the eggs.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 25-30 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Let the Queijadas cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cupcakes can be served warm or at room temperature and are best enjoyed fresh.
