Ingredients
1 cup unsalted pistachios (shelled and lightly toasted)
1 cup mascarpone cheese
1 cup heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup strong brewed coffee (cooled)
2 tablespoons coffee liqueur (optional)
24 ladyfingers (savoiardi)
Chopped pistachios (for garnish)
Cocoa powder (for dusting)
Instructions
- In a food processor, blend the pistachios until finely ground. In a bowl, combine the ground pistachios, mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until smooth and creamy.
- In a shallow dish, mix the brewed coffee and coffee liqueur (if using). Dip each ladyfinger quickly into the coffee mixture, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a serving dish. Spread half of the pistachio cream over the ladyfingers. Repeat with the remaining ladyfingers and pistachio cream.
- Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
- Before serving, dust the top with cocoa powder and garnish with chopped pistachios.
