1 cup strong brewed coffee (cooled)

2 tablespoons coffee liqueur (optional)

24 ladyfingers (savoiardi)

Chopped pistachios (for garnish)

Cocoa powder (for dusting)


Instructions

  • In a food processor, blend the pistachios until finely ground. In a bowl, combine the ground pistachios, mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until smooth and creamy.
  • In a shallow dish, mix the brewed coffee and coffee liqueur (if using). Dip each ladyfinger quickly into the coffee mixture, ensuring they are soaked but not soggy.
  • Layer half of the soaked ladyfingers in the bottom of a serving dish. Spread half of the pistachio cream over the ladyfingers. Repeat with the remaining ladyfingers and pistachio cream.
  • Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
  • Before serving, dust the top with cocoa powder and garnish with chopped pistachios.

Notes
