Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter

2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup shredded coconut
1 cup powdered sugar
2 tablespoons milk (for frosting)
1 teaspoon pink food coloring
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan on a wire rack.
- In the meantime, prepare the frosting by mixing the powdered sugar, 2 tablespoons of milk, and pink food coloring until smooth and spreadable.
- Once cooled, spread the pink frosting evenly over the cake, then cut into bars and serve.
Notes
For extra coconut flavor, consider toasting the shredded coconut before adding it to the batter. Adjust the amount of pink food coloring to achieve your desired shade.
