Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent.
- Stir in the minced garlic and cook for about 1 minute until fragrant.
- Add the chopped asparagus and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable or chicken broth and bring to a boil. Reduce heat and simmer until the asparagus is tender, about 15 minutes.
- Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend half of the soup and mix it back in.
- Season with salt, pepper, and freshly squeezed lemon juice to taste.
