Description

1 teaspoon Baking Powder

1/2 teaspoon Salt

1 cup Unsalted Butter

softened to room temperature

1 1/2 cups Granulated Sugar

2 Large Eggs

at room temperature

1 teaspoon Pure Vanilla Extract

1 1/2 teaspoons Pure Peppermint Extract

divided

1/2 to 1 teaspoon Red Gel Food Coloring

1/2 to 3/4 cup Crushed Peppermint Candies or Candy Canes


Instructions

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the eggs, vanilla extract, and 1 teaspoon of peppermint extract to the butter mixture, mixing until combined.
  • Gradually add the flour mixture to the wet ingredients, mixing until just incorporated.
  • Divide the dough in half. Leave one half plain and add red gel food coloring and 1/2 teaspoon of peppermint extract to the other half until you achieve your desired color.
  • Take small portions of each colored dough and roll them together to form a log. Twist the logs to create a swirl effect.
  • Wrap the logs in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Once chilled, slice the logs into 1/4-inch thick rounds and place them on prepared baking sheets.
  • Sprinkle the crushed peppermint candies on top of each cookie before baking.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra festive touch, drizzle melted chocolate over the cooled cookies before serving.
