Description
Pecan Pie Brownie Bombs are a delightful fusion of rich brownies and sweet pecan pie filling, all wrapped in a smooth chocolate coating.
Ingredients
1 box of brownie mix (or 1 batch of homemade brownie batter)
Eggs
oil
and water (according to brownie mix instructions
if you’re using a box)
1 cup of pecans
roughly chopped
1/2 cup light corn syrup
1/4 cup unsalted butter
melted
1/4 cup brown sugar
1 teaspoon vanilla extract
1 large egg
1 cup semi-sweet chocolate chips
1 tablespoon butter (for a smoother texture)
Instructions
- Prepare the brownie mix according to the instructions on the box or make a batch of homemade brownie batter.
- Preheat the oven and grease a baking dish.
- Pour the brownie batter into the baking dish and bake according to the package directions.
- While the brownies bake, mix together the pecan pie filling ingredients in a bowl: chopped pecans, corn syrup, melted butter, brown sugar, vanilla extract, and egg.
- Once the brownies are done, remove them from the oven and let them cool slightly before pouring the pecan pie filling over the top.
- Return the dish to the oven and bake for an additional 15-20 minutes until the filling is set.
- Let the brownie bombs cool completely, then cut into squares.
- Melt chocolate chips and butter together in a microwave-safe bowl or double boiler and stir until smooth.
- Dip each brownie bomb in the chocolate coating and set on a wire rack to allow the chocolate to harden.
Notes
Allow the brownie bombs to cool completely for easier handling when dipping in chocolate. You can use a fork for coating to keep your hands clean.
