1 cup creamy peanut butter

1/2 cup powdered sugar

1/4 cup milk

1 cup chocolate chips (melted)

12 mini peanut butter cups


Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, combine the vegetable oil, buttermilk, eggs, and vanilla extract, then mix well.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Fill each cupcake liner about 2/3 full with the batter.
  • Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  • While the cupcakes are cooling, prepare the peanut butter filling by mixing the peanut butter, powdered sugar, and milk until smooth.
  • Once the cupcakes have cooled completely, make an indent in the center of each cupcake and fill with the peanut butter mixture.
  • Melt the chocolate chips and drizzle over the filled cupcakes. Top each with a mini peanut butter cup.
