1¾ cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 2/3 cups peanut butter chips (10-ounce package)

Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  • In a large mixing bowl, melt the butter and stir in the granulated sugar and vanilla extract until well combined.
  • Add the eggs, one at a time, mixing well after each addition.
  • In another bowl, sift together the cocoa powder, flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in 1 cup of the peanut butter chips.
  • Spoon the batter into the prepared cupcake liners, filling each about 2/3 full. Top each cupcake with the remaining peanut butter chips.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
