Ingredients
1 cup (2 sticks) butter
2 cups granulated white sugar
2 teaspoons vanilla extract
4 large eggs
3/4 cup unsweetened cocoa powder
1¾ cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 2/3 cups peanut butter chips (10-ounce package)

Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large mixing bowl, melt the butter and stir in the granulated sugar and vanilla extract until well combined.
- Add the eggs, one at a time, mixing well after each addition.
- In another bowl, sift together the cocoa powder, flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in 1 cup of the peanut butter chips.
- Spoon the batter into the prepared cupcake liners, filling each about 2/3 full. Top each cupcake with the remaining peanut butter chips.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
Notes
Feel free to add a drizzle of chocolate or peanut butter on top for extra flavor. Store leftovers in an airtight container for up to 3 days.
