1 cup ricotta cheese
½ cup heavy cream

Instructions
- In a blender, combine the fresh or thawed peas, ricotta cheese, heavy cream, chopped mint leaves, lemon juice, salt, and pepper. Blend until smooth.
- Line a loaf pan with plastic wrap, leaving some overhang. Pour the pea mixture into the prepared pan and smooth the top. Cover with the overhanging plastic wrap.
- Refrigerate for at least 4 hours or overnight until set.
- Once set, carefully unmold the terrine onto a serving platter. Drizzle with olive oil and garnish with fresh mint leaves and edible flowers if desired.
- Slice and serve chilled as a refreshing appetizer or light dish.
