about 2 large peeled potatoes
⅔ cup grated parmesan cheese
½ cup Panko breadcrumbs
3 to 4 tablespoons olive oil
¾ teaspoon salt
¾ teaspoon ground black pepper
onion or garlic powder

Instructions
- Preheat your oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, combine the grated potatoes, parmesan cheese, Panko breadcrumbs, olive oil, salt, pepper, and optional onion or garlic powder.
- Mix well until all ingredients are fully coated and combined.
- Spoon the mixture into the greased muffin tin, pressing down firmly to shape.
- Bake for 25-30 minutes or until golden brown and crispy on top.
- Allow to cool slightly before removing from the muffin tin and serve with your favorite condiments.
