Ingredients

1 pound bulk pork sausage

4 cups fresh spinach
4 ounces Monterey Jack cheese
shredded
12 large eggs
2/3 cup whole milk
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 375°F (190°C) and lightly spray a 9×13-inch baking dish with cooking spray.
- In a large skillet over medium heat, cook the sausage until browned. Drain excess fat.
- Add the chopped bell peppers, onion, garlic, and oregano to the skillet, cooking until the vegetables are tender.
- In a large bowl, combine the eggs, milk, Dijon mustard, salt, and pepper. Whisk until fully combined.
- Layer the hash browns in the prepared baking dish, followed by the sausage mixture, spinach, and cheese.
- Pour the egg mixture evenly over the layered ingredients.
- Cover with foil and refrigerate overnight or bake immediately for 30-35 minutes. If baking right away, remove foil halfway through for a crispy top.
- Let cool slightly, then cut into squares and serve warm.
