This Overnight Blueberry French Toast Casserole is a delightful make-ahead breakfast that blends the flavors of sweet blueberries and creamy custard-soaked bread, perfect for serving a crowd during brunch.
Ingredients
1 cup blueberries
8 oz cream cheese (softened

1 cup powdered sugar
1 tbsp vanilla extract (half for cream cheese
half for egg mixture)
2 tbsp milk (whole milk for richness)
2 loaves cubed french bread (day-old bread works best for soaking)
1 cup blueberries
1 tsp cinnamon
2 cups milk (any milk works
but whole milk adds richness)
8 eggs (large eggs)
1/2 tsp nutmeg
Instructions
- In a mixing bowl, blend the softened cream cheese with powdered sugar, half the vanilla extract, and 2 tablespoons of milk until smooth.
- In another bowl, whisk together the eggs, milk, cinnamon, nutmeg, and the remaining vanilla extract.
- In a greased baking dish, layer half of the cubed French bread, followed by the cream cheese mixture, and then sprinkle half a cup of blueberries on top.
- Add the remaining bread cubes and pour the egg mixture over the top, ensuring all bread is soaked.
- Cover the dish with plastic wrap and refrigerate overnight.
- Preheat your oven to 350°F (175°C). Bake the casserole for 30-35 minutes until golden and set.
- Let cool slightly before serving, and enjoy warm.
Notes
For best results, use day-old French bread as it soaks up the custard better. Feel free to add more fruits like bananas or strawberries for variation.
